Makes 10 Rolls
2 1/4 tsp instant yeast
1/2 cup warm water
1 tsp sugar
2 Tablespoons sugar
1 1/2 tsp salt
1/4 cup shortening
3/4 cup chopped onions
1 egg
1/2 cup milk, heated, cooled
2 3/4 all-purpose flour
Saute' onions in shortening. Cool. In a bowl, dissolve yeast and 1 tsp sugar in 1/2 cup warm water and let stand 5 minutes.
Add cooled onions, egg, milk, 2 Tablespoons sugar and salt to yeast mixture. Cover and let stand 15 minutes
Add flour, mix into dough and knead 5 minutes. Divide into 10 portions and pat and shape into buns and place two greased cookie sheets. Raise covered in warm place for one hour.
Bake at 350 degrees for 12 minutes or until lightly browned. Butter tops of buns and remove from pans to wire racks.
Avanti's Rolls
Makes 6 loafs
2 pkg active dry yeast
3 c water
3 Tbsp oil
3 eggs
1 tsp salt
1 1/4 c sugar
10-11 c flour
Dissolve yeast in warm water; add remaining ingredients & knead for approximately 10 minutes, or until dough is smooth & elastic.
Place dough in a greased bowl, turning once to bring greased side up.
Cover with a cloth & let rise in a warm, draft-free spot until dough has doubled in bulk (1 1/2 to 2 hours).
After first rising, punch dough down in bowl & turn over; let rise again until double (30-45 minutes).
Cut dough into 5 to 6 portions, each about the size of a grapefruit.
Let rise, covered for 10 minutes.
Flatten dough, pressing out all the air, and form into long loaves, about 12" long.
Place loaves on greased & floured cookie sheets; cover & let rise again (50-60 minutes).
